This mushroom and leek soup is full of flavour and so easy to make. It's one of my favourite keto recipes and will be a hit for the whole family. Unless they don't like mushrooms. If they don't like mushrooms they're probs freaks and you don't want that kind of negativity in your life so just hoard this and drink it from a mug while you hide in the pantry.

Ingredients
  1. 2kg sliced mushrooms of whatever type you enjoy
  2. 2 leeks, sliced thinly
  3. 2 tbsp butter
  4. 3 litres stock (I used lamb)
  5. 1 tbsp flour
  6. salt and pepper to taste
Instructions
  1. Using small amounts of butter, fry your mushrooms and leeks in batches - it usually takes me 2-3 batches.
  2. Add all of the mushrooms and leeks back into the pan and toss with 1tbsp flour.
  3. Add the stock and bring to a boil.
  4. Salt and pepper to taste.
  5. Consume like a starving badger.
