Ingredients
  1. 3 tbsp olive oil
  2. 3 brown onions, diced
  3. 2kg carrots, chopped
  4. 4 bay leaves
  5. 700ml jar of passata
  6. 2kg tomatoes
  7. 2 litres of water
  8. 2 vegetable stock cubes
  9. 1 tbsp red wine vinegar
  10. salt and pepper
Instructions
  1. Heat the oil in a large saucepan and cook the onions until softened.
  2. Add the carrots and stir for a few minutes.
  3. Add all remaining ingredients and bring to a boil.
  4. Reduce heat, cover, and simmer for 30 minutes.
  5. Remove the lid and simmer for another 20-30 minutes.
  6. Blitz with an immersion blender.
  7. Season to taste.
  8. Serve hot.
