Rolls
  1. 7g dry yeast
  2. 1 cup milk
  3. 112g butter
  4. 1/4 tsp salt
  5. 400g plain flour
  6. 1 1/2 tsp ground cinnamon
  7. 70g caster sugar
Vanilla Cream Icing
  1. 2 cups icing sugar
  2. 2 tbsp melted butter
  3. 2 tsp vanilla extract
Instructions
  1. In a small saucepan, melt 3tbsp of butter in the milk until warm to the touch (but before reaching boiling).
  2. Whisk in the yeast, salt, and 1tbsp sugar. Leave for 15 minutes to allow the yeast to activate.
  3. Gradually mix in the flour until it forms a loose ball of sticky dough.
  4. Empty dough onto a lightly floured surface and knead for approximately 10 minutes or until the dough is elastic and even. It may still be sticky but should hold together.
  5. Place the dough in an oiled bowl covered by a damp tea towel and let sit in a warm area for 1 hour or until the dough has approximately doubled.
  6. On a lightly floured surface, remove the risen dough and knead once or twice.
  7. Use a rolling pin to roll the dough out into a loose rectangle about 3-4mm thick.
  8. Brush the dough with remaining melted butter and sprinkle with cinnamon and sugar liberally.
  9. Roll the rectangle of dough up tightly and cut into slices, spacing them evenly in a casserole dish. Preheat oven to 175C (fan forced 160C).
  10. Cover the cinnamon rolls lightly with a damp tea towel and leave to rise again for 20-30 minutes in a warm room.
  11. Bake for 20-25 minutes or until the rolls are browned.
  12. Remove from oven, allow to cool, and top with vanilla cream icing.
